Ingredients

Wedges

  • 800g potatoes, cut into wedges
  • 1 drizzle of oil

Patties

  • 1 carrot, grated
  • 90g cheese, grated
  • 1 pack burger spices
  • 50g breadcrumbs
  • 1 egg
  • 2 Tbsp tomato sauce
  • 600g beef mince
  • 1 drizzle of oil
  • 2 Tbsp Dijon mustard

Beetroot

  • 1 beetroot, grated
  • 1 carrot, grated
  • 2 tsp apple cider vinegar

Onion

  • 1 drizzle of oil
  • 1 brown onion, thinly sliced

To Serve

  • 4 Tbsp tomato sauce
  • 1 lettuce, leaves separated
  • 1 tomato, thinly sliced

Steps

  1. Preheat oven to 230°C (or 210°C fan bake). Preheat BBQ hot plate to medium (if using).
  2. Cut potatoes into wedges and toss with oil on a lined oven tray. Season with salt and pepper and cook on upper oven rack for about 25 minutes, until golden and tender.
  3. Grate first carrot and cheese. In a large bowl, mix all patty ingredients together (except oil). Divide mixture into 6, roll into balls, then flatten into 1.5cm thick patties.
  4. Oil BBQ hot plate. Cook patties on BBQ hot plate for about 5 minutes each side, or until cooked through. Alternatively, heat oil in a large fry-pan on medium heat. Cook patties in batches for 2-3 minutes each side, until browned. Transfer to a lined oven tray and place on lower oven rack for 5-7 minutes, until completely cooked through. Reserve pan.
  5. Grate beetroot and second carrot and toss in a medium bowl with vinegar. Season to taste with salt and pepper.
  6. Thinly slice onion. Cook onion on BBQ hot plate for about 5 minutes until softened and golden brown. Season with salt and pepper. Alternatively, heat oil in reserved fry-pan on medium-high heat and cook onion for 3-5 minutes.
  7. Thinly slice tomato and season with salt. Separate lettuce leaves.
  8. Lettuce leaves filled with patties, beetroot, onion, tomato and tomato sauce. Serve chips with tomato sauce on the side.
