Pan-Fried Fish with Bacon Sautéed Broccolini and Apple Rocket Salad

Bacon sautéed broccolini adds great texture.


Ingredients

CELERIAC MASH

  • 1 celeriac, peeled and diced 1.5cm until you have about 1 cup worth
  • 400g potatoes, peeled and diced 1.5cm
  • 1 tablespoon butter
  • 2–3 tablespoons milk

APPLE ROCKET SALAD

  • 1 teaspoon red wine vinegar
  • 1 teaspoon wholegrain mustard
  • 1 teaspoon olive oil
  • 1 red apple
  • ½ bunch rocket leaves, root removed

BACON SAUTÉED BROCCOLINI

  • 1/4 pack streaky bacon, thinly sliced
  • ½ bunch broccolini, stalks thinly sliced, cut into small florets

PAN-FRIED FISH

  • 300g fish fillets
  • 2 tablespoons flour
  • 1 teaspoon butter

Steps

  1. a medium pot of salted water to the boil.
  2. Cook celeriac and potatoes in pot of boiling water until very soft, about 12 minutes. Drain and mash with butter and milk until smooth then season to taste with salt and pepper.
  3. While vegetables are cooking, whisk vinegar, mustard, and olive oil in a medium bowl until combined. Cut apple into matchsticks, add to bowl with dressing and toss to coat. Set aside.
  4. Heat a drizzle of olive oil in a large fry-pan on medium heat. Cook bacon for about 3 minutes until starting to brown. Add broccolini to pan and stir-fry for about 3 minutes, or until broccolini is just tender. Set aside and cover to keep warm.
  5. Wipe out pan with paper towels and return to medium heat with a drizzle of oil. Pat fish dry with paper towels and remove any remaining scales or bones. Season both sides with salt and pepper and lightly dust in flour, shaking off any excess.
  6. Add butter to pan. When butter starts foaming, cook fish for 3 minutes on first side, flip and cook for a further 1 minute or until just cooked through. Add rocket to bowl with apple and dressing and gently toss to coat.
  7. Divide celeriac mash between plates and top with pan-fried fish and bacon sautéed broccolini. Serve apple rocket salad on the side.
