15-Minute Southern Chicken Pitas with Salsa Roja

Here's a dish that's ready to eat in just 15 minutes. Simply cook the chicken, warm the pita bread and chop some vege. Putting it all together is as effortless as it sounds. Before you know it, dinner is done!
Ingredients
Chicken
- 125g lite sour cream
- 250g frozen corn
- 1 pack Southern spices
- 1 drizzle of oil
- 600g diced free range chicken breast
- 1 pinch of chilli flakes, optional
Pitas
- 1/2 pack garlic pita breads
To Serve
- 1 lettuce, roughly chopped
- 2 tomato, diced
- 1 bunch coriander, leaves picked
- 100g salsa roja

Heat oil in a large fry-pan on high heat. Add chicken, Southern spices and chilli flakes (if using). Cook chicken, stirring frequently, for about 6 minutes. Add corn and cook for a further 3-4 minutes or until chicken is cooked through (see tip). Remove from heat and stir through sour cream. Season to taste with salt and pepper.

While chicken is cooking, shred lettuce, dice tomato and pick coriander leaves.

Cut pitas in half and heat in microwave for 2-3 minutes, until warmed through. Alternatively, toast pitas in the toaster.
