
Teriyaki Glazed Salmon with Cauli Rice & Slaw

This recipe is as speedy as it is delicious! Rich salmon is glazed to perfection in teriyaki sauce made by our friends at Culley's!
Ingredients
Slaw
- 1 carrot, grated
- 350g slaw
- 1 Tbsp rice wine vinegar
- 2 tsp soy sauce
Salmon
- 500g salmon fillet, cut into 4 pieces
- 1/2 pack teriyaki sauce
- 2 tsp sesame seeds
Cauli Rice
- 400g diced cauliflower
- 1 Tbsp soy sauce
To Serve
- 1 bunch Thai basil, leaves picked
- 1/2 pack teriyaki sauce

Preheat oven to 220°C (or 200°C fan bake).

Toss diced cauliflower and first measure of soy sauce together on a lined oven tray. Roast on lower oven rack for about 15 minutes, until tender.

Pat salmon dry and remove any remaining pin bones. Cut into four pieces. Place on a lined oven tray, skin side down. Spoon over first measure of teriyaki sauce, season with salt and sprinkle over sesame seeds. Roast on upper oven rack for 6-8 minutes for medium rare, or until cooked to your liking. Rest, covered, for 1-2 minutes.

Grate carrot. Toss in a medium bowl with slaw, vinegar and soy sauce. Season to taste with salt and pepper.

Pick Thai basil leaves.
