Teriyaki Glazed Salmon with Cauli Rice & Slaw

This recipe is as speedy as it is delicious! Rich salmon is glazed to perfection in teriyaki sauce made by our friends at Culley's!


Ingredients

Slaw

  • 1 carrot, grated
  • 350g slaw
  • 1 Tbsp rice wine vinegar
  • 2 tsp soy sauce

Salmon

  • 500g salmon fillet, cut into 4 pieces
  • 1/2 pack teriyaki sauce
  • 2 tsp sesame seeds

Cauli Rice

  • 400g diced cauliflower
  • 1 Tbsp soy sauce

To Serve

  • 1 bunch Thai basil, leaves picked
  • 1/2 pack teriyaki sauce

Steps

  1. Preheat oven to 220°C (or 200°C fan bake).
  2. Toss diced cauliflower and first measure of soy sauce together on a lined oven tray. Roast on lower oven rack for about 15 minutes, until tender.
  3. Pat salmon dry and remove any remaining pin bones. Cut into four pieces. Place on a lined oven tray, skin side down. Spoon over first measure of teriyaki sauce, season with salt and sprinkle over sesame seeds. Roast on upper oven rack for 6-8 minutes for medium rare, or until cooked to your liking. Rest, covered, for 1-2 minutes.
  4. Grate carrot. Toss in a medium bowl with slaw, vinegar and soy sauce. Season to taste with salt and pepper.
  5. Pick Thai basil leaves.
  6. Slaw and cauli rice topped with salmon, remaining teriyaki sauce and Thai basil.
