15-Minute Japanese Style Chicken Salad with Sesame Mayo

A quick & easy salad with tempting fresh Japanese flavours.


Ingredients

To Serve

  • 2 Tbsp sesame mayo

Rice Salad

  • 1 tsp rice wine vinegar
  • 150g slaw
  • 1/2 pack pre-cooked brown rice
  • 1 capsicum, thinly sliced

Chicken

  • 1/2 pack black sesame seeds
  • 1/2 pack garlic & ginger paste
  • 275g diced free range chicken breast
  • 1 tsp sesame oil

Steps

  1. Heat sesame oil in a large fry-pan on high heat. Add chicken, garlic and ginger paste and cook for about 8 minutes, until cooked through. Chicken will no longer be pink in the middle. Once cooked, toss through sesame seeds.
  2. Squeeze rice in pack to separate grains. Tear top and microwave in pack for 2 minutes.
  3. Thinly slice capsicum and toss in a large bowl with slaw, warmed rice and vinegar. Season to taste with salt.
  4. Rice salad topped with chicken, sesame mayo and chilli.
