Tunisian Fish with Spiced Carrot Puree and Roasted Cauliflower

The carrot purée doesn’t need heating, it’s perfectly fine to pull out of the fridge an hour before starting the recipe.


Ingredients

ROASTED CAULIFLOWER

  • 1/4 head cauliflower, diced 1cm (until you have 1 cup worth)
  • 150g potatoes, scrubbed and diced 1cm
  • 1/4 red onion, diced 1cm
  • 1 tablespoon mild sweet chilli sauce
  • 1 handful baby spinach leaves, roughly chopped
  • 1 tablespoon golden raisins

TUNISIAN FISH

  • 1/4 cup panko breadcrumbs
  • 2 teaspoons butter, melted
  • 1 teaspoon olive oil
  • 1/2 teaspoon Tunisian fish spice mix
  • 1 tablespoon chopped coriander leaves and stalks
  • 150g fish fillet

TO SERVE

  • 2 tablespoons spiced carrot purée (at room temperature)
  • 1 tablespoon coriander leaves and stalks, chopped

Steps

  1. oven to 230°C. Line an oven tray with baking paper.
  2. Toss cauliflower, potatoes and onion on prepared tray with a drizzle of olive oil and sweet chilli sauce. Season with salt and pepper and roast on high rack in oven for 18 minutes, turning once during cooking.
  3. In a small bowl combine all Tunisian fish ingredients together (except fish).
  4. Pat fish dry with paper towels and remove any remaining scales and bones. Place fish on clean plate, season with salt and evenly spread crumb mixture over fish fillet to coat, pressing down with your fingers.
  5. When vegetables have 5 minutes cook time remaining, remove from oven and toss through spinach and raisins.
  6. Move veggies to one side of oven tray and carefully place fish on other side. Return fish and veggies to oven and cook until fish is golden and just cooked, about 5 minutes.
  7. Spoon two tablespoons of spiced carrot purée into centre of a plate along with roasted cauliflower and vegetables. Top with Tunisian fish and sprinkle over coriander.
