Soba Noodles with Sauteed Cabbage and Miso Broth

The soy dressing is the real star of this dish. Don’t be shy when adding.


Ingredients

GARLIC CHIPS AND SAUTÉED CABBAGE

  • 2 cloves garlic, thinly sliced
  • 1/2 leek, white part only, thinly sliced
  • 1/2 cabbage, thinly sliced, until you have about 4 cups worth

MISO BROTH AND SOBA NOODLES

  • 2 tablespoons miso paste
  • 1 tablespoon mirin
  • 2 cups vegetable stock
  • 200g dried soba noodles
  • 2 baby bok choy, ends trimmed 1cm, rinsed and cut into quarters lengthways
  • 2 tablespoons finely chopped coriander leaves

FRIED EGGS

  • 3 eggs

SOY DRESSING

  • 3 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 2 teaspoons finely grated ginger
  • 1 teaspoons kaffir lime coconut sugar

TO SERVE

  • 1 tablespoon crispy shallots
  • 2 tablespoons chopped peanuts and sesame seeds
  • 1 tablespoon coriander leaves, finely chopped

Steps

  1. a medium pot of salted water to the boil.
  2. Heat a drizzle of oil in a medium fry-pan on medium heat. Cook garlic for 30 seconds until golden, remove from pan and set aside. Using the same pan, add another drizzle of oil and cook leek and cabbage for 4–5 minutes until just tender.
  3. While cabbage is cooking, whisk miso paste, mirin and vegetable stock together in a medium pot and bring to the boil on high heat. Once boiling, reduce to medium heat and simmer for 3–4 minutes. Season to taste with salt.
  4. While broth simmers, cook soba noodles and bok choy in pot of boiling water for 3–4 minutes until noodles are al dente (just tender). Drain well, add to miso broth along with cabbage and coriander.
  5. Heat a drizzle of oil in same pan used for cabbage on medium heat. Crack eggs in, one by one, cook for 2 minutes until whites are set but yolk is still runny. Remove from pan and keep warm.
  6. Mix together all soy dressing ingredients in a small bowl. Set aside.
  7. Ladle sautéed cabbage and soba noodles into bowls, top with bok choy and pour over miso broth. Top with a fried egg, soy dressing, garlic chips, crispy shallots, peanuts and sesame seeds. Sprinkle with coriander.
