Bacon & Cheesy Potato Caesar with Soft Boiled Eggs

Switch up your Caesar salad routine and try our bacon and cheesy potato Caesar. It comes topped with crunchy cos, sweet tomatoes and soft boiled eggs and drizzled in Caesar dressing to complete this monster meal.
Ingredients
Potatoes
- 1200g potatoes, diced 2cm
- 1 drizzle of oil
- 125g colby cheese, grated
Caesar
- 200g green beans, ends trimmed
- 1 lettuce, roughly chopped
- 3 tomato, diced 2cm
- 400g bacon, diced 2cm
- 1 drizzle of oil
Eggs
- 1 pack eggs (6 pack)
To Serve
- 200g Caesar dressing

Preheat oven to 220°C (200°C fan bake). Bring a medium pot of water to the boil.

Dice potatoes and toss on a lined oven tray with oil. Season with salt and pepper and roast for about 25 minutes. Grate cheese. Turn oven to high grill. Sprinkle potatoes with cheese and grill for 3-5 minutes, until cheese is melted and potatoes are golden and tender. Allow to cool for 5 minutes.

Gently place eggs in pot of boiling water and cook for 6-8 minutes (or 12 minutes if you prefer hard boiled). Drain and cool under cold running water. Peel eggs and cut into quarters.

Trim beans, roughly chop lettuce, dice tomato and bacon. Set aside separately.

Heat oil in a large fry-pan on medium-high heat and cook bacon, stirring, for 6 minutes, until brown. Add beans to pan and cook a further 2 minutes, until bright green and tender.

Potatoes tossed with veggies, bacon and topped with eggs and Caesar dressing.
