20-Minute Mexi Pulled Beef Tacos with Cheese & Sour Cream

These tacos will be on the dinner table in just 20 minutes! The hard work has been done for you with tender and flavorful pulled beef plus a little kick from Culley's chile de arbol sauce. Take care, the chile de arbol has some heat!


Ingredients

To Serve

  • 100g baby spinach, shredded
  • 2 tomato, diced
  • 90g Colby cheese, grated
  • 1 pack tortillas
  • 125g sour cream

Beef

  • 1 drizzle of oil
  • 1 can kidney beans, drained & rinsed
  • 250g XX frozen corn XX
  • 300g pulled beef
  • 1 pack Mexi spices
  • 1 Tbsp chile de arbol
  • 1 cup beef stock

Steps

  1. Heat oil in a large fry-pan on medium-high heat. Drain and rinse beans. Add corn, beef, Mexi spices, chile de arbol (see tip), beans and stock to pan and bring to a simmer. Reduce heat to medium and simmer for about 3 minutes, until thickened, break up meat as it cooks.
  2. Dice tomato and grate cheese.
  3. Wrap stack of tortillas in a damp tea towel and heat in microwave for 1-2 minutes, until warm.
  4. Tortillas filled with beef, spinach, tomato, cheese and a dollop of sour cream.
