Hawaiian Veggie Pizzas with Caramelised Onions

The Hawaiian Pizza is the ideal recipe for the pizza lover who wants to take things one step further. The combination of sweet and savoury flavours is guaranteed to blow your mind.

- 150g BBQ mayo
Salad
- 3 tomato, diced
- 1 lettuce, roughly chopped
- 1 Tbsp apple cider vinegar
Onion
- 1 1/2 Tbsp balsamic vinegar
- 3 brown onion, thinly sliced
Pizzas
- 1 pack wholemeal pizza bases
- 3 Tbsp sweet chilli sauce
- 120g tomato paste
- 1 can pineapple chunks , drained & juice reserved
- 250g colby cheese, grated
- 2 capsicum, thinly sliced

Preheat oven to 220°C (or 200°C fan bake). Preheat two oven trays.

Slice capsicum and grate cheese and set aside. Reserve 2 tablespoons of juice and drain pineapple chunks.

In a small bowl, mix tomato paste and sweet chilli sauce. Divide paste between pizza bases and spread evenly to cover. Sprinkle cheese, capsicum and pineapple evenly over pizzas.

Transfer two pizzas to each preheated tray. Cook for 16-18 minutes, until the bases are crisp and golden around the edges. Swap trays halfway to ensure even cooking.

Thinly slice onion and heat oil in a large fry-pan on medium-high heat. Cook onion for about 8 minutes, until caramelised. Add balsamic vinegar and cook for a further minute and set aside.

Roughly chop lettuce and dice tomato. Toss in a medium bowl with 1 tablespoon of reserved pineapple juice and vinegar. Season to taste with salt and pepper.

Pizzas topped with caramelised onion and BBQ mayo. Serve salad on the side. Cut pizza into slices and enjoy the first batch while the remaining pizzas are cooking.
