Ready Made Mexican Jalapeño Chicken with Sour Cream & Brown Rice

Fresh Start approved (meaning it's less than 450 calories and refined sugar free) and packed with goodness this Mexican Chicken is served with brown rice, sour cream and fresh mint!


Ingredients

Rice

  • 2/3 pack brown rice

To Serve

  • 1/2 Lebanese cucumber, finely diced
  • 1 bunch mint, leaves picked
  • 2 Tbsp lite sour cream

Chicken

  • 1 pack Mexican Jalapeno Chicken

Steps

  1. Bring a medium pot of salted water to the boil.
  2. Add rice to pot of boiling water. Bring back to the boil and cook rice (ensuring a rapid boil) for about 20 minutes, or until grains are tender. Drain well through a sieve.
  3. Remove film from chicken and microwave on high for 6-8 minutes, until piping hot. Stir halfway through cook time. Alternatively, place in a medium pot, cover with a lid and cook on medium heat for about 10 minutes, stirring often, until very hot.
  4. Dice cucumber and pick mint leaves.
  5. Rice topped with chicken, cucumber, sour cream and mint.
