The easiest 15 minutes of your day. This comforting classic has had our superquick makeover - with Neapolitan tomato sauce, cherry tomatoes, fresh spaghetti and Sicilian pesto made with sundried tomato, almond and basil. Your house will smell terrific while this one cooks!
Ingredients
Bolognese
- 1/2 can cherry tomatoes
- 300g Neapolitan tomato sauce
- 1 capsicum, thinly sliced
- 250g beef mince
- 1 drizzle of oil
To Serve
- 50g baby spinach
- 1 Tbsp sicilian pesto
Pasta
- 1 drizzle of olive oil
- 200g fresh spaghetti

Bring a half full medium pot of hot salted water to the boil with a lid on.

Heat oil in a medium fry-pan on high heat. Cook beef mince for 3-4 minutes, breaking it up as you go with a wooden spoon. While cooking slice capsicum. Add capsicum, Neapolitan tomato sauce and tomatoes and bring to a simmer. Cook a further 3-4 minutes, until slightly reduced and hot through. Season to taste with salt and pepper.

Separate pasta so it is not stuck together. Cook pasta in pot of boiling water for 2-3 minutes, until just tender. Drain and return to pot with olive oil to prevent sticking.
