
Italian Steak Sandwiches with Focaccia & Rocket Pesto Mayo

Juicy sirloin steaks on soft focaccia adds a great contrasting texture to this Italian inspired sandwich. Our rocket and walnut pesto mayo gives the sandwich a creamy bright flavour that ties all the ingredients together nicely. Buon appetito!
Ingredients
To serve
- 100g rocket
- 2 tomato, thinly sliced
- 1 focaccia loaf 500g
Veggies
- 1 capsicum, sliced 1cm
- 1 courgette, cut into 1cm rounds
- 1 red onion, cut into wedges
- 1 drizzle of olive oil
- 1/2 tsp Italian salt
Steak
- 600g beef sirloin steaks
- 1 drizzle of olive oil
- 1/2 tsp Italian salt
Rocket pesto mayo
- 4 Tbsp mayonnaise
- 1 pack rocket & walnut pesto
Steps

Preheat oven to 220°C (or 200°C fan bake).

Slice courgette and capsicum and cut onion into wedges.

Heat oil in a large frypan on medium-high heat. Cook courgette, capsicum and onion with first measure of Italian salt for about 6-7 minutes, until softened and slightly charred. Set aside to serve and reserve pan.

Pat beef dry and season with second measure of Italian salt and pepper. Heat oil in reserved frypan on medium-high heat. Cook steak for 3-4 minutes each side, for medium (depending on thickness), or until cooked to your liking. Rest, covered.

Cut bread into quarters, then cut each quarter in half to create a 'bun'. Place on an oven tray and cook on bottom oven rack for about 5 minutes until heated through. In a small bowl combine pesto and mayo.

Thinly slice tomato and season with salt. Trim and discard fat from sirloin and thinly slice steak (see tip).

Focaccia filled with pesto mayo, steak, veggies, tomato and rocket. Season with a pinch of remaining Italian salt.
