Warming Chicken & Coriander Dumpling Noodle Soup with Asian Greens & Chilli Oil

Fancy something warming and delicious? Our flavour-packed, one-pot chicken & coriander dumpling noodle soup is comforting, healthy and ready in a flash. Think moreish dumplings, silky soba noodles, and al dente fresh veg in a gorgeous savoury-umami broth, with a little kick of chilli oil to taste. It's the perfect week night warmer!

- 4 tsp chilli oil, optional
Soup
- 100g baby spinach
- 2 pack chicken & coriander dumplings
- 1/2 pack soba noodles
- 1 Tbsp soy sauce
- 1 Tbsp fish sauce
- 8 cup boiling water
- 1 pack Asian stock blend
- 1 Tbsp sesame oil
- 30g ginger, finely grated
- 1 twin pack baby bok choy, leaves separated
- 1 broccoli, cut into small florets

Bring a full kettle to the boil.

Cut broccoli into florets and separate bok choy leaves. Finely grate ginger.

Heat sesame oil in a large pot on medium-high heat and cook ginger and Asian stock blend for 1 minute, until fragrant. Add boiling water measure, fish sauce and soy sauce. Bring to the boil.

Add 1/2 pack noodles to soup, stir well and and cook for 4 minutes. Add dumplings, bring back to a simmer and cook for 2 minutes. Add broccoli and cook for a further 2 minutes, until just tender. Add bok choy and spinach and stir to wilt, then remove from heat. Season to taste with soy sauce.

Ladle chicken noodle soup into bowls and top with chilli oil.
