Enjoy this lighter and faster version of a classic pappardelle with ragù. Our premade pasta sauce, made from fresh tomatoes and fresh pasta, will ensure this dinner is on your table in only 15 minutes!
Ingredients
Sauce
- 1/2 can crushed tomatoes
- 1 pack red pepper pesto Bolognese
- 1 capsicum, thinly sliced
- 200g fresh chorizo grind
- 1 drizzle of oil
Pasta
- 1 drizzle of oil
- 200g fresh fettuccine
To Serve
- 50g baby spinach
- 30g feta cheese, crumbled

Bring a medium pot of hot salted tap water to the boil with a lid on.

Heat oil in a large fry-pan on high heat. Cook chorizo for 3-4 minutes, breaking it up as you go with a wooden spoon. While cooking, thinly slice capsicum. Add red pepper pesto Bolognese, capsicum and canned tomatoes and bring to a simmer. Cook a further 3-4 minutes, until slightly reduced and hot through. Season to taste with salt and pepper.

Separate pasta strands and add to pot of boiling water. Cook for 2-3 minutes, until tender. Drain and toss with olive oil to prevent sticking.

Crumble feta.

Pasta topped with sauce, feta and spinach.
