
20-Minute Spiced Beef Steaks with Couscous & Sun-Dried Tomato Dressing

This 20-minute steak and couscous recipe is fast and fresh. We’ve given couscous a lift with a refreshing sundried tomato dressing that serves as the perfect bed for the juicy spiced rubbed steak – so delicious you won’t believe you made this yourself in 20 minutes!
Ingredients
Couscous
- 1 1/4 cup vegetable stock
- 1 pack couscous
- 1 carrot, grated
- 1 capsicum, thinly sliced
- 100g baby spinach, roughly chopped
- 100g sundried tomato dressing
Beef
- 1 drizzle of oil
- 600g beef rump steaks
- 1 pack Kiwi Spice Blend

Bring stock to the boil in a medium pot on high heat (see tip). Once boiling, turn off heat, add couscous, stir, cover and leave for 5 minutes.

Grate carrot, thinly slice capsicum and roughly chop spinach.

Heat oil in a large frypan on medium-high heat. Pat beef dry. Evenly coat with Kiwi spice blend and season with salt and pepper. Cook beef for 3-4 minutes each side for medium-rare, depending on thickness, or until cooked to your liking.

In a medium bowl, combine couscous and veggies along with sundried tomato dressing. Toss and season to taste with salt and pepper. Thinly slice beef.
