Spicy Chicken Burger Bowls with Kumara Chips & Guacamole

Spicy Chicken Burger Bowls are everything you love about burgers, but served as a bountiful bowl packed with veggies! The juicy, flavour-packed chicken patty is served on a bed of fresh mesclun with kumara chips, creamy guacamole and chilli yoghurt. We promise, you won't miss the buns!
Ingredients
Chicken Patty
- 1/2 tsp oil
- 1/4 pack chipotle spices
- 1/2 Tbsp wholemeal breadcrumbs
- 125g free range chicken mince
- 1/4 red onion, grated
Kumara Chips
- 1/4 tsp oil
- 1/2 carrot, cut into chips
- 100g kumara, cut into chips
Chilli Yoghurt
- 2 Tbsp yoghurt
- 1 tsp chile de arbol
Bowl Fillings
- 1 Tbsp guacamole
- 1/4 pack cherry tomatoes, cut in half
- 50g mesclun
- 1/4 red onion, thinly sliced

Preheat oven to 220°C (or 200°C fan bake).

Cut kumara and carrot into chips and toss on a lined oven tray with oil. Season with salt and pepper. Roast for about 25 minutes, until golden and tender.

Grate first measure of onion and add to a medium bowl. Add remaining chicken patty ingredients (except oil) and mix well, until combined. Shape into 1/4 cup size 1cm thick patties. Set aside on a plate.

Heat oil in a medium, non-stick frypan on medium-high heat. Cook patty for about 4 minutes each side, until golden and completely cooked through. Set aside to rest, before cutting into quarters.

Combine chile de arbol and yoghurt together in a small bowl with a pinch of salt. Thinly slice second measure of onion and cut tomatoes in half. Set all aside to serve.

Mesclun, tomatoes, onion, kumara chips and chicken patties topped with chilli yoghurt and guacamole.
