Mexican Chilli Beef Lettuce Cups with Refried Beans & Sour Cream

Bursting with flavour, these Mexican saucy chilli beef lettuce cups make a super-tasty and easy midweek meal! Packed with veggies and topped off with sour cream for the ultimate comfort meal!


Ingredients

To Serve

  • 2 Tbsp lite sour cream
  • 1 baby cos lettuce, leaves separated
  • 1 Lebanese cucumber, finely diced

Refried Beans

  • 1 garlic clove, minced
  • 1/2 tsp white vinegar
  • 1/2 can refried black beans

Chilli

  • 1/2 tsp oil
  • 1/2 cup chicken stock
  • 150g frozen corn
  • 25g tomato paste
  • 250g lean beef mince
  • 1/2 pack smoky Mexican spices
  • 1 garlic clove, minced
  • 1/2 carrot, grated

Steps

  1. Heat oil in a medium frypan on medium-high heat. Grate carrot and mince both garlic cloves. Set one aside for later. Cook carrot and first measure of garlic with a pinch of salt for 2-3 minutes, stirring frequently, until starting to soften. Add smoky Mexican spices and cook for 30 seconds, until fragrant.
  2. Add beef to pan and cook for 3-4 minutes, breaking beef up as it cooks. Add tomato paste, corn, stock and a pinch of salt, bring to a simmer and reduce heat to medium. Cook for 6-7 minutes, until sauce has thickened. Season with salt and pepper. Cover to keep warm.
  3. Combine beans, vinegar and second measure of garlic in a small pot and heat gently, until warm. Season with salt and set aside, covered.
  4. Finely dice cucumber and separate lettuce into cups. Set both aside for serving.
  5. Lettuce cups filled with chilli and refried beans. Top with cucumber and sour cream.
