Add some Mexican flavour to your week with these quick and easy chicken tacos. Chicken breast, tomato paste and smoky Mexican spices are cooked together for a juicy, fragrant filling. Served in warm wheatmeal wraps and topped off with slaw and sour cream for the perfect finishing touch.
Ingredients
To Serve
- 1 bunch coriander, leaves picked
- 4 Tbsp sour cream
- 1 pack wheatmeal tortillas
Chicken
- 2 tsp oil
- 550g diced free range chicken breast
- 1 pack smoky Mexican spices
- 60g tomato paste
- 1/2 cup water
Slaw
- 2 tsp white vinegar
- 350g slaw
- 100g baby spinach

Heat oil in a large frypan on medium-high heat. Add chicken, a pinch of salt and smoky Mexican spices and cook for 5 minutes. After 5 minutes add tomato paste and water and bring to a simmer. Cook for a further 2-3 minutes, until chicken is cooked through. Season to taste with salt and pepper.

While chicken cooks combine slaw, spinach and vinegar in a large bowl and toss to combine.

Wrap stack of tortillas in a damp tea towel and heat in microwave for 1-2 minutes, until warm.

Pick coriander for serving.
