Keep it fresh and spicy with these Thai coconut chicken tacos. Chicken is cooked in our punchy creamy coconut red curry sauce and wrapped up in warm tortillas. The aroma, sight and taste will all transport you to Thailand.
Ingredients
Slaw
- 2 tsp rice wine vinegar
- 350g slaw
Chicken
- 2 tsp soy sauce
- 400ml coconut milk
- 2 tsp red curry paste, see tip
- 600g diced free range chicken breast
- 1 carrot, grated
- 1 drizzle of oil
To Serve
- 1 pack tortillas

Heat oil in a large frypan on high heat and grate carrot. Pat chicken dry and season with salt and pepper. Cook carrot and chicken for about 5 minutes, until browned. Add red curry paste, coconut milk and soy sauce and bring to the boil. Simmer for about 3-5 minutes, until sauce is slightly reduced.

In a large bowl, toss slaw and vinegar. Season to taste with salt and pepper.

Gently separate tortillas. Place 3-4 tortillas on a large heat-proof plate and microwave for 20 seconds, until warm. Repeat with remaining tortillas.
