Create your own bowl of bliss with this 15-minute healthy Greek-inspired chicken dinner. Featuring an enticing assortment of vegetables like earthy beetroot and all topped off with delicious hummus and yoghurt!
Ingredients
Couscous
- 1/3 cup boiling water
- 1/2 pack wholemeal couscous
Bowl Fillings
- 1/4 pack baby beetroot, cut into quarters
- 1/2 carrot, peeled into ribbons
- 1/2 bunch mint, leaves picked
- 1/2 pack mesclun
- 1 1/2 Tbsp hummus
- 2 Tbsp yoghurt
Chicken
- 1/2 tsp oil
- 140g diced free range chicken breast
- 1/4 pack Greek Spices
- 1/4 lemon, juiced

Bring a half-full kettle to the boil.

In a small heatproof bowl, combine couscous, boiling water measure and a pinch of salt. Stir, cover and leave to swell for 10 minutes. Fluff up grains with a fork.

Heat oil in a small frypan on high heat. Add chicken, Greek spices and a pinch of salt. Cook for about 8 minutes, until golden and cooked through. Remove from heat and squeeze in lemon juice.

Meanwhile, quarter baby beetroot, peel carrot into ribbons and pick mint leaves.

Couscous with chicken, beetroot, carrot and mesclun. Serve with a dollop of hummus, drizzle of yoghurt and sprinkle over mint.
