Tuscan Baked Chicken Drums with Garlic & Basil Bread

Layer all the ingredients in your prettiest roasting dish and let your oven do its thing. Juicy Tuscan-spiced chicken on a bed of tomatoes comes out of the oven all warm and bubbly - this is the best one-dish chicken bake you will ever need. Don't forget to mop up all the delicious juices with homemade basil garlic bread.


Ingredients

Chicken

  • 2 carrot, cut in half lengthways & thinly sliced
  • 1000g free range chicken drumsticks
  • 1 drizzle of oil
  • 1 pack Tuscan spices
  • 60g tomato paste
  • 2 can crushed tomatoes
  • 2 tsp brown sugar
  • 1/4 tsp salt
  • 100g baby spinach
  • 125g sour cream

Bread

  • 2 garlic clove, minced
  • 100g basil drizzle
  • 1 Vienna loaf

Steps

  1. Preheat oven to 230°C (or 210°C fan bake).
  2. Cut carrot in half lengthways and slice. Pat chicken dry and season with salt and pepper. Toss with carrot and oil in a roasting dish and bake on upper oven rack for 20 minutes, until browned.
  3. Mince garlic and mix with basil drizzle. Slice loaf in 2cm intervals, leaving a hinge at the bottom. Spread each slice with basil drizzle, wrap loaf in foil and place on an oven tray. Bake on lower oven rack for 15 minutes, until warm.
  4. Combine Tuscan spices, tomato paste, canned tomatoes, sugar and salt in a medium bowl. Mix to combine. When chicken has cooked for 20 minutes, remove roasting dish from oven and turn over chicken. Pour tomato sauce mixture evenly over chicken and return to oven. Bake for a further 10 minutes, until cooked through.
  5. Remove roasting dish from oven and stir through baby spinach and sour cream. Season to taste with salt and pepper.
  6. Baked chicken with garlic basil bread.
