Our pork fettuccine is a scrumptious, warming Italian dish to add to your repertoire. Flavoured with L'authentique's pork and fennel grind and a pre-made fire-roasted tomato sauce, this meal is as delicious as it quick to make.
Ingredients
Ragù
- 1 drizzle of oil
- 300g pork and fennel grind
- 50g sliced roasted capsicum
- 1/4 cup chicken stock
- 100g fire-roasted tomato sauce
Pasta
- 200g fresh fettuccine
Salad
- 1 carrot, peeled into ribbons
- 50g mesclun
- 1/2 tsp balsamic vinegar
To Serve
- 30g grated Parmesan
Steps

Bring a medium pot of hot salted tap water to the boil with the lid on.

Heat oil in a medium frypan on medium-high heat. Add pork and fennel grind and cook for about 3 minutes, breaking it up as it cooks. Add capsicum, stock and fire-roasted tomato sauce and bring to a simmer.

Reduce heat to medium and simmer for 4-5 minutes, until thick. Season to taste with salt and pepper. Set aside.

Add pasta to pot of boiling water and cover with the lid. Return to a rapid boil and cook for 2-3 minutes, until tender. Drain and return to pot.

Peel carrot into ribbons. Toss in a large bowl with balsamic vinegar and mesclun. Set aside.

Pasta topped with ragù and Parmesan. Serve salad on the side.
