
Crispy Chicken Strips with Horopito Tartare & Moemoe Potatoes

Celebrate Matariki with these crispy chicken strips paired with roasted Moemoe potatoes, a variety of potato known for its multi-coloured skin, cream-coloured patterned flesh and excellent flavour, and topped off with peppery horopito tartare. It's a medley of delicious textures and flavours that the whole family will love!
Ingredients

- 2 Tbsp horopito tartare sauce
Veggies
- 1 drizzle of oil
- 200g moe moe potatoes, diced 2cm
- 200g kūmara, diced 2cm
- 1 parsnip, diced 2cm
- 1 carrot, diced 2cm
Chicken
- 50g breadcrumbs
- 1/4 tsp salt
- 1 drizzle of oil
- 1 egg
- 1 Tbsp plain flour
- 300g free range chicken breasts, sliced 2cm
Broccoli Smash
- 1/2 broccoli, finely chopped
- 150g frozen peas
- 1/2 Tbsp butter

Preheat oven to 230°C (or 210°C fan bake). Bring a medium pot of salted hot tap water to the boil.

Dice potatoes, kūmara, parsnip and carrot and toss with oil on a lined oven tray. Season with salt and pepper and spread out in a single layer. Bake for 25-30 minutes, until golden and tender.

Pat chicken dry and slice into 2cm strips. Add to a medium bowl along with flour and toss to coat. Crack egg into bowl with chicken. Burst the yolk with tip of knife and toss to coat chicken. Place breadcrumbs and salt in a second medium bowl. Add chicken to bowl with crumbs, turn to coat each piece well and place on a plate or tray.

Heat oil in a large frypan on medium heat. Cook chicken for 3-4 minutes each side (depending on thickness), or until golden and cooked through.

Finely chop broccoli. Cook broccoli and peas in pot of boiling water for 6-8 minutes, or until soft. Drain well, return to pot and roughly mash with butter. Season to taste with salt and pepper. Cover to keep warm.
