20-Minute Teriyaki Chicken Egg Noodles with Sesame Seeds

This 20-minute egg noodle dish is easy to make and will hit all your Japanese food cravings. Juicy chicken, bok choy and broccoli stir-fried together with teriyaki sauce gives the dish a balanced sweet and savoury flavour.


Ingredients

Noodles

  • 1 drizzle of oil
  • 1 Tbsp soy sauce
  • 300g teriyaki sauce
  • 1 twin pack baby bok choy, thinly sliced
  • 1 pack fresh egg noodles
  • 900g diced free range chicken breast
  • 1 broccoli, cut into small florets
  • 2 carrot, grated

To Serve

  • 1 pack sesame seeds

Steps

  1. Bring a medium pot of salted water to the boil.
  2. Heat oil in a large frypan (or wok) on high heat. Grate carrot and cut broccoli into small florets. Pat chicken dry and season lightly with salt. Cook chicken, carrot and broccoli for about 8 minutes, until browned and cooked through.
  3. Use hands to separate noodles. Place noodles in pot of boiling water, stir to separate strands and cook for 5 minutes, until just tender. Thinly slice bok choy and add to pot. Cook for a further minute and drain well.
  4. Remove pan from heat. Add noodles to pan along with teriyaki sauce and soy sauce. Toss to combine and season to taste with soy sauce.
  5. Chicken noodles with sesame seeds.
