Lamb Pizzas with Yoghurt Drizzle and Greek Salad

Leave an edge around the frame of pizza bases when spreading tomato paste mix, to form a nice crust. Allow your pizzas to cool slightly before slicing.
Ingredients
LAMB PIZZAS
- 70g tomato paste
- 2 tablespoons sweet chilli sauce
- 3 pizza bases
- 2 cups grated Colby cheese
- 1 red onion, thinly sliced
- 450g Greek lamb mince
- 100g feta cheese
GREEK SALAD
- 1 capsicum
- 1 tomato
- ½ telegraph cucumber
- 2 teaspoons vinegar (e.g. balsamic, white wine, red wine)
YOGHURT DRIZZLE
- ½ cup natural yoghurt
- 1 teaspoon vinegar (e.g. white wine, red wine, cider)
- 1 teaspoon runny honey

oven to 220°C. Preheat two oven trays (or pizza stones if you have them).

In a small bowl, combine tomato paste, sweet chilli sauce and a drizzle of olive oil until smooth. Set aside.

Lay three sheets of baking paper on bench and place a pizza base on top. Divide tomato mixture between bases and spread to cover. Sprinkle cheese and red onion evenly over bases. Using clean hands, tear away small amounts of lamb mince and dot on top. Crumble over feta cheese.

Slice one pizza in half. Carefully lift up baking paper with pizzas on top and place one and a half pizzas on each preheated tray (or stones) then slide baking paper away. Cook pizzas for 12–14 minutes, until bases are crispy and golden around the edges. Swap trays halfway to ensure even cooking.

While the pizzas cook, prepare the salad. Remove core and seeds from capsicum. Dice capsicum, tomato and cucumber 1cm. Add all to a medium bowl with first measure of vinegar and a drizzle of olive oil. Toss to combine and season to taste with salt and pepper.

In a small bowl, combine all yoghurt drizzle ingredients together and mix until smooth. Slice pizzas into wedges.

Divide Greek salad and slices of lamb pizza between plates. Spoon yoghurt drizzle over pizza and salad.
