French Onion Braised Chicken with Mash & Greens

This recipe has caramelised onions, tender chicken breasts and is topped with cheese! It’s rich without being heavy and deeply flavourful without too much work.


Ingredients

Mash

  • 400g potatoes, peeled & diced
  • 100g baby spinach, roughly chopped
  • 1/4 cup milk

Onions

  • 2 brown onion, thinly sliced
  • 1 tsp oil
  • 1 tsp honey

Chicken

  • 550g free range chicken breasts, sliced 2cm
  • 1 pack Italian seasoning
  • 2 Tbsp cornflour
  • 90g cheese, grated
  • 1 tsp oil
  • 3/4 cup beef stock

Greens

  • 1 broccoli, cut into small florets
  • 200g Brussels sprouts, thinly sliced

Steps

  1. Bring a large pot of salted water to the boil. Bring a full kettle to the boil.
  2. Peel and dice potatoes and roughly chop spinach. Place potatoes in a medium pot and cover with hot tap water. Cook on high heat for 15-20 minutes, until tender. Drain and return to pot with milk and mash, until smooth. Stir through spinach and season to taste with salt and pepper.
  3. Thinly slice onion. Heat oil in a large frypan on medium-high heat. Cook onion and honey with a pinch of salt for 10-12 minutes, until soft and caramelised. Transfer onion to a bowl and reserve pan.
  4. Pat chicken dry and slice into 2cm strips. Season with salt and pepper and toss with Italian seasoning and cornflour. Grate cheese and set aside.
  5. Return pan to medium-high heat with oil. Cook chicken for about 2 minutes on one side, until golden. Turn chicken and return onion to pan along with stock. Sprinkle with cheese and cook for about 5 minutes, until chicken is cooked through and cheese is melted. Season to taste with salt and pepper.
  6. Cut broccoli into small florets and slice Brussels sprouts. Add Brussels and broccoli to a medium heatproof bowl and cover with boiling water. Cover and leave for 5-6 minutes, before draining. Season to taste with salt and pepper.
  7. Mash topped with chicken, greens and onions on the side.
