15-Minute Japanese Pork Bowls with Pickled Ginger Mayo

It is no secret that Japan is known for its incredible food. This delicious ginger and soy pork bowl is packed with bold flavours and is the perfect quick dinner recipe. Just 15 minutes and a few simple ingredients are all you need for this fresh and fabulous meal.


Ingredients

Veggies

  • 1 pack edamame beans
  • 1 telegraph cucumber, peeled into ribbons
  • 2 radish, grated

To Serve

  • 4 Tbsp ginger mayo

Pork

  • 1 Tbsp sesame oil
  • 600g free farmed pork mince
  • 150g ginger sauce
  • 1 Tbsp soy sauce

Rice

  • 2 pack pre-cooked brown rice

Steps

  1. Bring a full kettle to the boil.
  2. Heat sesame oil in a large frypan on high heat. Cook pork, stirring, for 3-4 minutes, until browned. Add ginger sauce and cook for a further 2-3 minutes until pork is cooked through. Add soy sauce to season.
  3. Place edamame in a large heatproof bowl and cover with boiling water. Cover with a plate and leave for 5 minutes, until bright green and tender. Drain well. Peel cucumber into ribbons and grate radish.
  4. Squeeze rice in pack to separate grains. Tear top and microwave in pack for 2 minutes.
  5. Rice topped with pork, edamame, cucumber and radish. Dollop over pickled ginger mayo.
