
South American Bean Burgers with Hand-Cut Fries

The pattie mix can be made in advance, just shape and cook when ready to eat.
Ingredients
HAND-CUT FRIES
- 600g potatoes, scrubbed and cut into 2cm-thick fries
SOUTH AMERICAN BEAN PATTIES
- 1 brown onion, finely chopped
- 1 carrot, grated
- 3 tablespoons tomato paste
- 2 tablespoons South American spice mix
- 2 tablespoons tomato sauce
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- Zest of 1 lemon
- 2 teaspoons lemon juice
- 1 teaspoon salt
- 1 egg
- ¼ cup oats
- ¼ cup flour
- 50g feta cheese, crumbled
SALSA
- 1 tomato
- 1 spring onion
- ½ teaspoon vinegar (e.g. red wine, white wine, cider)
SLAW
- ¼ cabbage, finely shredded until you have 2–3 cups worth
- ¼ cup mayonnaise
- 1 sachet chipotle sauce (optional)
TO SERVE
- 6 burger buns

oven to 220°C. Line two oven trays with baking paper. Preheat BBQ hot plate to mediumhigh heat (if using).

Toss potatoes with a drizzle of oil on first prepared tray and season with salt and pepper. Bake for 20–25 minutes, until golden and tender. Turn once during cooking. While potatoes cook, heat a drizzle of oil in a large frypan on medium-high heat. Cook onion and carrot for 2–3 minutes, until soft.

Add tomato paste, South American spice mix and tomato sauce to pan and cook a further 1 minute, until fragrant. Transfer to a large bowl and toss with black beans and kidney beans. Mash beans using a potato masher, then fold through lemon zest and juice, salt, egg and oats until combined.

Sprinkle flour over a clean board. Using clean hands, split bean mixture into 6 even portions. Roll mixture into balls then place onto board. Press down to form patties about 2cm-thick then sprinkle tops with a little extra flour. Heat a drizzle of oil in a large fry-pan on medium-high heat.

Cook patties for 2–3 minutes each side, until golden and crispy. Transfer to one side of second prepared tray. Slice burger buns horizontally through the centre and place, closed, beside patties. Sprinkle feta evenly over patties and bake for 4–5 minutes, until buns are warmed through and toasted.

While buns are toasting, finely dice tomato 0.5cm and finely slice spring onions. Mix both in a small bowl with vinegar and set aside. Toss all slaw ingredients in a medium bowl until combined and season to taste with salt and pepper.

Place everything in the middle of the table for everyone to build their own burgers.
