Indonesian Veggie Nasi Goreng with Sesame Egg Ribbons & Peanuts

A vegetarian take on the Indonesian classic, our nasi goreng combines a colorful stir-fry of broccoli and capsicum with precooked rice, crunchy peanuts and a refined sugar free honey soy ginger sauce! The whole dish is topped with sesame egg ribbons to make it a truly indulgent weeknight dinner.


Ingredients

Nasi Goreng

  • 1/4 broccoli, roughly chopped
  • 25g whole roasted capsicum, diced 1cm
  • 1 tsp oil
  • 25g nasi goreng sauce
  • 1/4 pack pre-cooked brown rice
  • 1 tsp soy sauce
  • 1/2 baby bok choy, thinly sliced

Egg

  • 1 egg
  • 1 tsp soy sauce
  • 1/2 tsp sesame oil

To Serve

  • 1/4 lemon, cut into wedges
  • 1 bunch coriander, leaves picked
  • 1 Tbsp honey soy ginger sauce
  • 1/4 pack whole peanuts

Steps

  1. Roughly chop broccoli, dice capsicum, thinly slice bok choy, cut lemon into wedges and pick coriander. Set all aside separately.
  2. In a medium bowl, whisk eggs with second measure of soy sauce.
  3. Heat sesame oil in a medium, non-stick frypan on medium-heat. Add the egg mixture, swirling pan so egg spreads to cover the base. Cook for about 1-2 minutes each side, until golden and cooked through. Transfer to a chopping board, slice into ribbons and cover to keep warm. Reserve pan.
  4. Return pan to medium heat with oil. Cook broccoli and nasi goreng sauce for 1-2 minutes, stirring, until softened. Add rice and first measure of soy sauce and stir-fry for 2-3 minutes, until hot through. Add capsicum and bok choy and cook for a further 1-2 minutes, until bok choy has wilted and vegetables are tender. Season to taste with soy sauce.
  5. Nasi goreng topped with egg ribbons and a drizzle of honey soy ginger sauce. Sprinkle over coriander and peanuts and serve lemon wedges on the side for squeezing.
