15 minutes is all you need to make this vibrant, flavourful chicken dish served with cauliflower rice pilaf and red pepper pesto aioli. It’s super quick, super yum and sure to satisfy!
Ingredients
Cauli Pilaf
- 25g harissa
- 100g baby spinach
- 200g diced cauliflower
- 75g frozen peas
- 1/2 can chickpeas, drained & rinsed
- 1 carrot, grated
- 1/2 tsp oil
Harissa Chicken
- 1/2 tsp oil
- 1/2 pack harissa spices
- 275g diced free range chicken breast
To Serve
- 2 Tbsp tahini yoghurt

Heat oil in a large frypan on high heat. Add chicken and harissa spices and cook for about 8 minutes stirring occasionally, until cooked through. Season with salt and pepper.

Heat oil in a second large frypan on high heat. Grate carrot and drain and rinse chickpeas. Add both to pan along with peas and diced cauliflower. Cook for about 4 minutes, until hot and tender. Add spinach and harissa paste and toss to combine. Remove from heat and season to taste with salt and pepper.
