Pulled Pork Pizzas with Honey Yoghurt Dressing

Sse olive oil instead of sweet chilli sauce for your pizza sauce if you have fussier eaters.


Ingredients

PULLED PORK PIZZAS

  • 70g tomato paste
  • 2 tablespoons GF mild sweet chilli sauce
  • 3 GF pizza bases
  • ½ red onion, finely sliced
  • 1½ cups frozen corn, defrosted
  • 400g GF pulled pork
  • ¼ cup GF BBQ sauce (optional)
  • 1½ cups grated Colby cheese

HONEY YOGHURT DRESSING AND SALAD

  • ½ cup natural yoghurt
  • 2 teaspoons runny honey
  • 1 tablespoon GF vinegar (e.g. cider, white wine, red wine)
  • ½ iceberg lettuce
  • 1 carrot
  • 1 apple
  • ¼ teaspoon GF Dijon mustard

Steps

  1. oven to 220°C. Preheat two oven trays (or two pizza stones if you have them).
  2. Mix tomato paste and sweet chilli sauce together in a small bowl. Lay 3 sheets of baking paper on bench and top each with a pizza base.
  3. Drizzle olive oil into a small bowl then rub oil around outside of each base in a 1.5cm frame. Evenly spread tomato mixture between bases, leaving an edge for the crust.
  4. Evenly sprinkle red onion, corn and pulled pork over pizzas. Dollop over BBQ sauce (if using), sprinkle with cheese and season. Cut one pizza in half. Carefully lift up baking paper with pizzas on top and place one and a half pizzas on each preheated tray, then carefully slide baking paper away.
  5. Cook pizzas for about 15 minutes, until bases are crispy and golden. Swap trays halfway during cooking. While pizzas are cooking, combine yoghurt, honey and vinegar in a small bowl. Season to taste with salt and pepper and set aside.
  6. Finely shred lettuce; grate carrot; slice apple into thin matchsticks (or grate). Toss all in a large bowl. Mix 2 tablespoons of the yoghurt dressing with mustard then toss through salad. Season to taste with salt and pepper.
  7. Slice whole pizzas into 6 pieces and half pizzas into 3 pieces. Divide slices between plates and serve salad on the side. Drizzle remaining honey yoghurt dressing over pizzas.
