Medi-Loaded Fries with Greek Salsa & Hummus

Transport yourself to the shores of the Mediterranean with our take on these loaded fries. Roast potatoes until crispy, then load up with lentils, a Greek salsa and dollops of our much-loved vegan almond 'feta' dip.
Ingredients
Salsa
- 1 drizzle of olive oil
- 1 tsp vinegar
- 50g baby spinach, roughly chopped
- 1 Lebanese cucumber, diced
- 1 tomato, diced
- 1/2 red onion, thinly sliced
Lentils
- 1/2 red onion, thinly sliced
- 1 tsp soy sauce
- 1/2 cup vegetable stock
- 25g tomato paste
- 1 pack Greek spices
- 1 drizzle of oil
- 1 can brown lentils, drained & rinsed
- 1 carrot, grated
Wedges
- 400g potatoes, cut into chips
- 1 drizzle of oil
To Serve
- 1/2 pack vegan almond feta dip, lemon and garlic
- 50g hummus
- 1/2 pack mixed olives

Preheat oven to 220°C (or 200°C fan bake).

Cut potatoes into chips and toss with oil on a lined oven tray. Season with salt and pepper and roast for 25-30 minutes, until tender and golden. Turn once during cooking.

Thinly slice both measures of onion and set aside half for salad. Grate carrot. Drain and rinse lentils. Set aside.

Dice tomato and cucumber and roughly chop spinach. Toss in a medium bowl with second measure of onion, vinegar and olive oil. Season to taste with salt and pepper.

Heat oil in a medium frypan on medium-high heat. Cook onion and carrot for about 4 minutes, stirring, until browned. Add Greek spices and tomato paste and cook for about 1 minute, stirring, until fragrant. Add lentils, stock and soy sauce, reduce heat to low and cook for about 3 minutes, until thickened and reduced. Season to taste with salt and pepper.

Fries topped with lentils, salsa and olives. Dollop over hummus and almond feta dip.
