Cajun Fish Tacos with Salsa Fresca and Mango Yoghurt

Ingredients
CAJUN FISH
- 150g fish fillet
- 1 teaspoon Cajun spice mix
SALSA FRESCA
- 1 tomato
- ¼ red onion
- 1 clove garlic
- ½ baby cos lettuce
- 2 tablespoons chopped coriander leaves
- Juice of ½ lime
MANGO YOGHURT
- 2 tablespoons natural yoghurt
- 1 tablespoon mango and coconut sauce
- 1 tablespoon chopped coriander leaves
TO SERVE
- 2 tortillas wrap
- 1 teaspoon mango and coconut sauce
- ½ lime, cut into wedges

oven to 220oC. Preheat BBQ hot plate to high (if using).

Pat fish dry with paper towels and remove any remaining scales or bones. Cut any larger fillets in half and season with Cajun spice mix and salt. Set aside to marinate.

While fish marinates, prepare salsa fresca. Dice tomato 1cm; finely dice red onion; finely chop garlic; finely slice cos lettuce. Mix all together in a medium bowl along with coriander, lime juice and a drizzle of olive oil. Season to taste with salt and pepper. Set aside.

Mix all mango yoghurt ingredients together in a small bowl and season to taste with salt and pepper. Set aside.

Wrap tortillas in foil and warm in the oven for 5 minutes. Heat a drizzle of oil in a medium fry-pan on medium-high heat.

Cook fish for 1–2 minutes each side, until just cooked through.

place wraps onto a plate and top with salsa fresca, Cajun fish and a dollop of mango yoghurt. Drizzle over remaining mango and coconut sauce and squeeze over lime juice.
