Spanish Pulled Beef Wraps with Salsa Verdenaise

Ingredients

SALAD

  • ½ iceburg lettuce
  • ½ telegraph cucumber
  • 1 avocado
  • Juice of ½ lemon (zest reserved)
  • ½ tablespoon olive oil

SPANISH PULLED BEEF

  • 1 brown onion, thinly sliced
  • 1 carrot, grated
  • 2 tablespoons Spanish spice mix
  • 500g pulled beef
  • 1 tablespoon flour
  • 1 cup chicken or beef stock
  • ½ teaspoon red wine vinegar
  • ½ teaspoon Worcestershire sauce

SALSA VERDENAISE

  • 2 tablespoons mint leaves
  • 3 tablespoons parsley leaves and stalks
  • 1 clove garlic
  • Zest of 1 lemon
  • 1 teaspoon red wine vinegar
  • ¼ cup mayonnaise

TO SERVE

  • 12 tortilla wraps

Steps

  1. oven to 200°C
  2. Prepare the salad. Finely slice lettuce and dice cucumber and avocado 1cm. Mix all together in a large bowl with lemon juice and olive oil. Season to taste with salt and pepper and set aside.
  3. Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook onion for 2–3 minutes, until softened. Add carrot and Spanish spice mix and cook a further 1–2 minutes, until fragrant and carrot has softened.
  4. Reduce heat to low-medium and add pulled beef and flour. Stir well. Add stock, bring to a simmer and cook for 4–5 minutes, until thickened. Add first measure of red wine vinegar and Worcestershire sauce. Season to taste with salt and pepper, set aside and cover to keep warm.
  5. While beef is cooking, wrap tortillas in foil and place in oven for 9–10 minutes to warm through.
  6. Finely chop mint and parsley and mince garlic. Add to a small bowl with all remaining salsa verdenaise ingredients, mix together and season to taste with salt and pepper.
  7. Place pulled beef, salad, wraps and salsa verdenaise in the middle of the table so everyone can build their own pulled beef wraps
