
Crispy Sesame Tofu with Soba Noodle Stir-Fry

This Vietnamese-inspired soba noodle stir-fry is the perfect addition to your weeknight menu! A quick and easy noodle dish that is full of flavour and combines soba noodles with crispy tofu, fresh vegetables, and a delicious nuoc cham sauce.
Ingredients
Noodle Stir-Fry
- 25g nuoc cham
- 200g sliced red cabbage
- 30g garlic & ginger paste
- 1 drizzle of olive oil
- 1/2 can corn, drained & rinsed
- 1/2 pack soba noodles
- 1 tsp sesame oil
- 1 broccoli, cut into small florets
To Serve
- 1 radish, thinly sliced
- 1 bunch coriander, leaves picked
- 25g nuoc cham
Tofu
- 300g tofu, sliced 1cm
- 1/2 pack sesame seeds
- 1/2 Tbsp cornflour
- 1 drizzle of olive oil
Steps

Bring a medium pot of unsalted water to the boil on high heat.

Cook noodles in pot of boiling water for about 3 minutes, until almost tender. Drain and run under cold water to stop cooking. Return to pot, add sesame oil, toss to coat and set aside for later.

Cut broccoli into small florets and set aside. Drain and rinse corn. Pat tofu dry, slice into 1cm thick strips and toss in a large bowl with sesame seeds and cornflour. Season and set aside.

Heat oil in a large frypan on high heat. Cook tofu for 4-6 minutes turning regularly, until golden. Remove from heat and keep warm.

Heat oil in a second large frypan on high heat. Add broccoli, garlic & ginger paste, corn and cabbage. Cook, stirring often, for about 4 minutes until vegetables are tender. Add noodles and toss through vegetables. Cook for about 1 minute, until hot. Remove from heat and toss through first measure of nuoc cham. Season to taste.

Thinly slice radish and pick coriander.

Noodles topped with tofu, radish and coriander. Drizzle over second measure of nuoc cham.
