
Cumberland Sausage and Apple Pizzas with Cos Salad

Ingredients
CUMBERLAND SAUSAGE AND APPLE PIZZAS
- 3 pizza bases
- 2 tubs tomato paste
- 1 tablespoon pizza spice mix
- 2 cups grated mozzarella cheese
- ½ red onion, thinly sliced
- 1 apple, core removed and diced 1cm
- 2 tomatoes, diced 1cm
- 400g Cumberland pork sausage grind
SALAD DRESSING
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- 1 teaspoon runny honey
- 1 teaspoon Dijon mustard
COS SALAD
- ½ red onion (optional, adults)
- ½ telegraph cucumber
- 1 avocado
- 1 baby cos lettuce

oven to 220°C. Preheat two oven trays or pizza stones (if you have them).

Cut one pizza base in half. Lay two pieces of baking paper onto a flat surface and place one and a half pizza bases on each. Divide tomato paste between bases and spread over evenly to coat. Mix pizza spice mix and cheese together in a small bowl and set aside.

Sprinkle onion, apple and tomato evenly over pizza bases. Use your hands to tear away small amounts of sausage grind and dot on top. Season with salt and pepper before sprinkling over cheese/spice mix.

Carefully lift up baking paper with pizzas on top, then place one and a half on each preheated tray (or stone) before carefully sliding the baking paper away (use a fish slice to help with this).

Cook pizzas for 12–14 minutes, until the pizza basea are crisp and golden around the edges. Swap trays halfway to ensure even cooking. Cut cooked Cumberland sausage and apple pizzas into 8–10 wedges.

While pizzas cook, mix all salad dressing ingredients together in a large bowl. Thinly slice onion (if using); cut cucumber in half lengthways and thinly slice; dice avocado flesh 1cm; roughly chop lettuce. Add all to bowl with salad dressing. Toss to combine and season to taste with salt and pepper.

Divide slices of pizza between plates and serve cos salad on the side.
