
Sausage Wraps with BBQ Mayo and Salad

Alternatively cook sausages on BBQ hot plate on medium-high heat for 6–8 minutes, until sausages are golden and cooked through.
Ingredients
SAUSAGE WRAPS
- 1 red onion (optional, adults)
- 2 teaspoons brown sugar
- 1 tablespoon balsamic vinegar
- 1–2 tablespoons water
- 550g Asian sausages
- 10 tortilla wraps
- 1 cup grated Edam cheese
BBQ MAYO
- 50g BBQ sauce
- ¼ cup + 2 tablespoons mayonnaise
SALAD
- ½ punnet cherry tomatoes
- 1 baby cos lettuce
- 1 carrot
TO SERVE
- 2–3 tablespoons tomato sauce (optional)

oven to 200°C. Preheat BBQ hot plate to medium-high (if using).

Cut onion in half then slice thinly. Heat a drizzle of oil in a medium pot on medium heat and cook onions for 5–8 minutes, stirring often, until soft and lightly coloured. If onion browns too quickly, add a tablespoon of water.

Add sugar, balsamic vinegar and one tablespoon of water and cook for a further 1–2 minutes, until onions are caramelised. Remove from heat and cover to keep warm.

While onions cook, heat a drizzle of oil in a large fry-pan on medium-high heat. Cook sausages for 6–8 minutes, until golden and cooked through.

Wrap tortillas, in a stack, in foil and warm in oven for 5 minutes, while you prepare the rest of the meal.

Grate cheese and place into a serving bowl. In a small bowl mix BBQ sauce and mayonnaise together. Cut cherry tomatoes in half; thinly slice lettuce; peel and grate carrot. Add all to a large bowl and toss to combine.

Place everything in the middle of the table for everyone to help themselves. Fill tortillas with caramelized onions (if using), grated cheese, sausage and salad and drizzle over BBQ mayo or tomato sauce (if using). Roll up and eat. Serve any leftover salad on the side.
