Crispy Bacon & Egg Caesar with Roasties

Enjoy our take on this classic salad. Crispy bacon and a creamy Caesar dressing makes every bite feel indulgent, while still being packed with veggies!


Ingredients

Roast Veggies

  • 400g kūmara, diced 2cm
  • 1 drizzle of oil
  • 1 red onion, sliced 1cm
  • 1 carrot, diced 2cm
  • 1 parsnip, diced 2cm
  • 400g potatoes, diced 2cm

Salad

  • 100g Caesar dressing
  • 50g grated Parmesan
  • 1 lettuce, chopped

Bacon

  • 1 drizzle of oil
  • 300g bacon, diced 2cm

Eggs

  • 1 pack eggs (4 pack)

Steps

  1. HEAT oven 220°C (200°C fan bake). Dice kūmara, potatoes, parsnip and carrot. Slice onion. Toss on an oven tray with oil and season with salt and pepper.
  2. Roast veggies for 25-30 mins, until golden and tender. SWAP trays halfway through cooking.
  3. Place eggs in a pot and cover with water. Bring to the boil, reduce to a simmer and cook for 3 mins. Want hard-boiled eggs? Cook a further 3 mins. Drain and cool under cold tap. Peel and cut in halves or quarters.
  4. Dice bacon. Heat oil in a frypan on high. Cook bacon for 7-10 mins, until brown and crispy. Transfer to a paper towel to drain.
  5. Chop lettuce and arrange on a platter. Top with roasted veggies, bacon, eggs and Parmesan. Dollop with Caesar dressing. Dig in!
