This superquick falafel bowl is packed with Turkish flavours. The combination of tangy beetkraut, slaw and creamy hummus complements one another perfectly in this nourishing bowl.
Ingredients
Couscous
- 1/2 cup boiling water
- 1 pack sumac blend
- 1/2 cup couscous
Falafel
- 1 drizzle of oil
- 200g falafel
Slaw
- 100g baby spinach
- 150g slaw
- 50g beetkraut
- 1 tsp vinegar
To Serve
- 100g hummus
- 50g smoked garlic aioli
- 1 bunch mint, leaves picked

Bring a full kettle to the boil.

In a heatproof bowl, combine boiling water measure, sumac blend and couscous. Stir, cover and leave to swell for 5 minutes. Fluff up grains with a fork and season to taste with salt and pepper.

Heat oil in a medium frypan on medium-high heat. Cook falafel for 2-3 minutes each side, until golden and cooked through.

Place spinach, slaw, beetkraut and vinegar into a medium bowl. Toss to combine and season to taste with salt and pepper. Pick mint leaves.

Couscous, slaw and falafel in bowls. Top with hummus, smoked garlic aioli and mint.
