
Vietnamese Chicken Laab with Lemongrass, Supergrains & Peanuts

Whip up an aromatic, colourful and refreshing meal in just 30 minutes. Free range chicken mince seasoned with punchy lemongrass flavours. This mouthwatering laab is packed full of veggies that's sure to fill you up.
Ingredients
To Serve
- 1 baby cos lettuce, thinly sliced
- 1 bunch coriander, leaves picked
- 1/2 lemon, cut into wedges
- 100g mung bean sprouts
- 1/2 pack chopped peanuts
Chicken Laab
- 30g nuoc cham
- 1 pinch of chilli flakes
- 50g lemongrass paste
- 250g free range chicken mince
- 1 tsp oil
Super Grain Salad
- 1/4 cup supergrains
- 1 Lebanese cucumber, cut in half lengthways & thinly sliced
- 1/2 carrot, peeled into ribbons
- 1/2 lemon, juiced
- 1 tsp soy sauce
- 1 tsp vinegar

Bring a medium pot of salted water to the boil.

Cook super grains in pot of boiling water for about 20 minutes, until grains are tender with a slight bite. Drain, rinse under warm water to cool slightly and leave to drain well.

Cut cucumber in half lengthways and thinly slice. Peel carrot into ribbons, thinly slice lettuce and pick coriander leaves. Cut second measure of lemon into wedges to garnish and set aside for serving.

When grains have 10 minutes cook time remaining, heat oil in a large frypan on high heat. Cook chicken, lemongrass paste and chilli flakes for about 5 minutes, using a wooden spoon to break up chicken as it cooks, until cooked through and any liquid has evaporated. Stir through nuoc cham and season to taste with salt and pepper.

Toss super grains with first measure of lemon juice and remaining super grain salad ingredients. Season to taste with salt and pepper.

Lettuce, topped with super grain salad and chicken laab. Top with mung beans, peanuts, coriander and lemon wedges for squeezing.
