Beef with Balsamic Tomatoes and Parmesan Thyme Mash

Delicious Beef with Balsamic Tomatoes and Parmesan Thyme Mash


Ingredients

PARMESAN THYME MASH

  • 150g potatoes, peeled and diced 1–2cm
  • 1 teaspoon butter
  • 2 tablespoons milk or water
  • 1½ tablespoons finely grated Parmesan cheese
  • 1 teaspoon finely chopped thyme leaves

BALSAMIC TOMATOES

  • 1 clove garlic, finely chopped
  • 1 teaspoon olive oil
  • 1 teaspoon balsamic vinegar
  • ½ teaspoon brown sugar
  • 1 teaspoon finely chopped thyme leaves
  • 1/3 punnet cherry tomatoes
  • 1 handful rocket leaves

BEEF

  • 150g beef rump steak (at room temperature)

TO SERVE

  • 1 tablespoon shaved Parmesan cheese
  • 1 teaspoon picked thyme leaves

Steps

  1. a small pot of salted water to the boil. Preheat BBQ hot plate or grill to high (if using).
  2. Cook potatoes in pot of boiling water for 12–15 minutes, until very soft. Drain and return to pot with butter, milk/water, Parmesan cheese and thyme. Mash until smooth and season to taste with salt and pepper.
  3. While potatoes are cooking, prepare rest of the meal. Place all balsamic tomatoes ingredients (except rocket) into a small bowl and toss to combine. Season with salt and pepper and set aside. Pat beef dry with paper towels, rub with oil and season with salt and pepper.
  4. When potatoes are about halfway through cook time, heat a small fry-pan on high heat. Cook beef for about 2 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Set aside to rest, covered, for 5 minutes before slicing against the grain. Return pan to medium heat.
  5. Once pan has cooled down slightly, add tomatoes and marinade to pan for about 1 minute, stirring regularly, until tomatoes have started to blister and marinade has reduced and become sticky. Pierce some tomatoes with a fork to release their juices.
  6. If tomato mixture becomes too dry and starts to burn, add 1–2 tablespoons of water and toss to evaporate. Remove pan from heat and toss rocket through tomato mixture just before serving.
  7. Place parmesan thyme mash onto a plate. Top with balsamic tomatoes, beef and shaved Parmesan and garnish with thyme leaves.
