Ready in just 15 minutes, these tacos will blow your mind with their amazing flavour and texture. Smoky cauliflower is served with chipotle sour cream and slaw that adds a crunchy freshness.
Ingredients
To Serve
- 150g slaw
- 50g feta cheese, crumbled
- 1 bunch coriander, leaves picked
Tacos
- 1 pack wheatmeal tortillas
Chipotle Sour Cream
- 2 tsp chipotle sauce
- 2 Tbsp sour cream
Cauliflower
- 1 tsp oil
- 1/2 tsp salt
- 25g tomato paste
- 1/2 pack smoky Mexican spices
- 200g diced cauliflower
- 1/2 can brown lentils, drained & rinsed
Steps

Heat oil in a large frypan on high heat. Drain and rinse lentils and add to pan along with cauliflower and 1/2 pack smoky Mexican spices. Cover with a lid and cook for about 3 minutes, until starting to soften. After 3 minutes, add tomato paste and salt, stir well and continue to cook for a further 3 minutes with the lid off, until tender. Season to taste with salt and pepper.

Combine sour cream and chipotle sauce in a small bowl and set aside for serving.

Wrap tortillas in a damp tea towel and microwave for about 1 minute, until hot. Keep warm.

Pick coriander and crumble feta for serving.

Tortilla filled with cauliflower mixture, slaw and sour cream. Sprinkle over feta and coriander.
