Waixican's Authentic Prawn Tacos with Cheesy Grilled Tortillas

Your local amigos are here to pack a punch with these tacos, bursting with fresh, authentic Mexican flavours! Located in beautiful Waiheke, we thought these tacos were too good not share with the rest of Aotearoa.


Ingredients

Prawns

  • 1/2 pack smoked paprika
  • 1 tsp vinegar
  • 1/4 tsp salt
  • 2 tsp butter
  • 300g prawns, defrosted
  • 2 tomato, roughly chopped
  • 1/2 brown onion, finely diced
  • 1 garlic clove, minced
  • 1 capsicum, diced 1cm

Cheesy tortillas

  • 50g cheese, grated
  • 1 pack tortillas

To serve

  • 1 baby cos lettuce, shredded
  • 1 bunch coriander, leaves picked
  • 1 pack green chile sauce
  • 4 Tbsp lite sour cream

Steps

  1. Preheat oven to high grill.
  2. Finely dice onion, mince garlic, dice capsicum and roughly chop tomatoes. Pat prawns dry and remove tails (see tip). Grate cheese, shred lettuce and pick coriander leaves. Set aside separately.
  3. Spread tortillas out in a single layer on a large lined baking tray. Evenly sprinkle with cheese and set aside.
  4. Heat butter in a medium fry-pan on high heat. Cook onion, garlic and capsicum with salt for 6-7 minutes until softened and golden brown. Add tomato, prawn and smoked paprika. Cook for 4-5 minutes, stirring frequently until prawns are just cooked through. Stir through vinegar and season to taste with salt and pepper.
  5. Meanwhile, cook tortillas in oven for 2-3 minutes until cheese has just melted and tortillas are golden brown.
  6. Warmed tortillas filled with prawns, lettuce, coriander, green chilli sauce and sour cream.
