Turkey Burgers with Cranberry Sauce and Chips

Ingredients

CHIPS

  • 500g potatoes, scrubbed and cut into 1cm-thick chips
  • 1 tablespoon melted butter

TURKEY PATTIES

  • 450g turkey mince
  • ¾ red onion, very finely diced
  • 1 tablespoon turkey spice mix
  • ½ teaspoon salt
  • ¾ cup panko breadcrumbs
  • 1 egg
  • 1 tablespoon Worcestershire sauce

TO SERVE

  • 5 burger baps
  • 150g cranberry sauce
  • 1 tomato, thinly sliced
  • ½ bag baby spinach leaves
  • ¼ red onion, finely sliced (optional, adults)
  • ¼ cup mayonnaise

Steps

  1. oven to 220°C. Line two oven trays with baking paper. Preheat BBQ hot plate or grill to high (if using).
  2. Toss potato chips with butter on first prepared tray. Season with salt and bake for 20–25 minutes, until cooked through and golden. Turn once during cooking.
  3. Combine all turkey patty ingredients in a large bowl, season with pepper and mix well using clean hands. Use a ½ cup measure to shape into patties, measuring about 8cm wide and 1cm thick.
  4. Slice burger baps horizontally and place baps, closed, on one half of second prepared tray. Heat a drizzle of oil in a large fry-pan on medium heat. Cook patties, in batches, for about 2 minutes each side, until browned.
  5. Place patties on same tray as baps (overlap baps if required) and finish cooking in oven for about 5 minutes, until patties are just cooked through and baps are lightly toasted.
  6. Spread cranberry sauce on base of each burger bap and place a turkey patty on top. Top with tomato, spinach leaves and red onion (if using). Spread other half of burger bun with mayonnaise and close burger. Serve with any remaining patties, salad and chips on the side.
