This tasty vegetarian dinner comes together in just 15 minutes. Crispy za'atar tofu is served over a delicious cannellini tahini slaw with hummus on the side. It's perfect for nights when you are short on time but want to serve up a healthy dinner.
Ingredients
To Serve
- 2 tomato, diced 1cm
- 1 bunch mint, leaves picked
- 4 Tbsp hummus
- 4 Tbsp tahini dressing
Tofu
- 1 Tbsp cornflour
- 1 pack sesame za'atar
- 1/2 tsp salt
- 600g tofu, diced 2cm
- 2 tsp oil
Slaw
- 1 can cannellini beans, drained & rinsed
- 350g slaw
- 100g baby spinach
- 2 Tbsp tahini dressing
Steps

Heat oil in a large nonstick frypan on medium-high heat. Pat tofu dry, dice 2cm and toss in a large bowl with cornflour, za'atar and salt, until well coated. Add tofu to pan and cook for 8-10 minutes, tossing often, until golden and crispy.

Drain and rinse cannellini beans and add to a large bowl along with slaw, spinach and first measure of tahini dressing. Toss together, season to taste with salt and pepper and set aside for serving.

Dice tomato and pick mint leaves.

Slaw topped with tofu, hummus, tomatoes and mint. Drizzle over remaining tahini dressing.
