Sam Cane's Venison & Bacon Smash Burger with Horseradish Aioli & Cheddar

Get ready, this one’s about to hit different. Inspired by Sam Cane's deer farming background, we've created a burger that you don't want to miss. Tasty venison and bacon smash patties (with melted cheddar!) are stacked between soft, salty pretzel buns. Balanced with tangy horseradish aioli and loads of vege, pick this meal and you won't regret it!


Ingredients

Smash Patties

  • 1 pack Geraldine vintage cheddar cheese, grated
  • 1 drizzle of oil
  • 200g venison mince
  • 50g minced bacon

Burgers

  • 1 tomato, thinly sliced
  • 1/2 pack precooked baby beetroot, thinly sliced
  • 50g horseradish aioli
  • 1 baby cos lettuce, leaves separated
  • 1 pack pretzel burger bun, cut in half

Steps

  1. Preheat oven to 220°C (or 200°C fan bake).
  2. In a large bowl, combine venison and bacon mince (see tip 1). Divide mixture into two and roll into balls. Set aside. Grate cheese and set aside.
  3. Cut buns in half and set aside on a lined oven tray. Separate lettuce leaves and thinly slice tomato and beetroot.
  4. Heat oil in a large frypan on high heat (see tip 2). Add patties and flatten with a fish slice or the underside of a small frypan, until they are just under 1cm thick. Cook patties for 2-3 minutes each side, until golden brown and cooked through. Season both sides of patties with salt and pepper as you cook them. During last minute of cook time, sprinkle patties with cheese and cover pan with a lid to melt cheese.
  5. Heat buns in oven for 4-5 minutes, until warm through and starting to colour.
  6. Burgers filled with horseradish aioli, patties, lettuce, tomato and beetroot. Serve remaining veggies on the side.
