Chicken and Bacon Sausages with Chips and Onion Gravy

Ingredients

CHIPS

  • 1 bag hand-cut potato chips, any liquid drained

SLAW

  • ½ telegraph cucumber
  • ½ cos lettuce
  • 1 bag ranch slaw
  • 3 tablespoons mayonnaise
  • 1 teaspoon vinegar (e.g. red wine, white wine, cider)

CHICKEN AND BACON SAUSAGES AND ONION GRAVY

  • 1 brown onion
  • 10 chicken and bacon sausages
  • 1 pouch onion gravy

Steps

  1. oven to 230°C. Line an oven tray with baking paper. Preheat BBQ hot plate to medium (if using).
  2. Pat chips dry with paper towels and toss with a drizzle of oil on prepared tray. Season with salt and pepper and cook for about 25 minutes, until golden and tender. Turn once during cooking.
  3. While chips cook, prepare the slaw. Dice cucumber 1cm and roughly chop cos lettuce. Add to a large bowl with ranch slaw, mayonnaise and vinegar. Toss well until combined and season to taste with salt and pepper. Set aside.
  4. Heat a drizzle of oil in a large fry-pan on medium-high heat. Thinly slice onion and set aside. Cook sausages for 5-7 minutes, until cooked through and golden. Turn often to ensure even cooking. Set aside, covered, to keep warm. Keep pan on heat.
  5. Heat a drizzle of oil in same pan used to cook sausages and reduce heat to medium. Cook onion for about 3 minutes, until soft and starting to brown.
  6. Add onion gravy to pan with onion and cook for about 1 minute, until heated through.
  7. Divide chicken and bacon sausages, chips and slaw between plates and serve onion gravy on the side.
