15-Minute Creamy Bacon Alfredo with Fresh Fettuccine & Balsamic Onions

The hero of this creamy, comforting pasta dish is our own Parmesan pasta sauce, which makes throwing this meal together quick and easy. Add to that loads of green veggies, fresh fettuccine and premade balsamic onions to finish, this recipe is packed with flavour and is ready in only 15 minutes!


Ingredients

Creamy Bacon Alfredo

  • 100g baby spinach
  • 1 drizzle of oil
  • 250g bacon, thinly sliced
  • 2 cup frozen peas
  • 400g Parmesan pasta sauce

Fresh Pasta

  • 1 drizzle of olive oil
  • 400g fresh fettuccine
  • 1 broccoli, roughly chopped

To Serve

  • 50g grated Parmesan
  • 100g balsamic onions

Steps

  1. Bring a half full medium pot of hot salted water to a boil on high heat with a lid on.
  2. Heat oil in a large frypan on high heat and thinly slice bacon. Cook bacon for 5-6 minutes, until cooked through and lightly browned. Add and peas and cook for a further 2-3 minutes, until tender.
  3. Meanwhile, roughly chop broccoli.
  4. Use hands to separate pasta so it is not stuck together. Add pasta and broccoli to pot of boiling water, stir well to avoid pasta sticking and return lid to pot. Cook for about 3 minutes, until just tender. Reserve 1 cup pasta water and then drain. Return pasta and broccoli to pot with olive oil to prevent sticking.
  5. Remove the pan with bacon from heat and stir through sauce, spinach and 1/2 cup reserved pasta water. Add pasta and broccoli to pan with sauce (if your pan is not big enough, use the pasta pot). Toss to combine and season to taste with salt and pepper. If sauce is too thick, add remaining reserved pasta water.
  6. Top creamy bacon alfredo with Parmesan and balsamic onions.
