Lamb Kofta with Greek Couscous Salad and Lemon Hummus

A delicious feta filled couscous salad accompanies the koftas


Ingredients

LAMB KOFTA

  • 450g lamb mince
  • 3 teaspoons lamb spice mix
  • ¼ cup panko breadcrumbs
  • ½ teaspoon salt
  • 10 skewers, soaked in water for 5 minutes

GREEK COUSCOUS SALAD

  • 1 cup couscous
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • 1 cup boiling water
  • ½ telegraph cucumber
  • 1 carrot
  • 2 spring onions (optional, adults)
  • ½ punnet cherry tomatoes
  • 3 tablespoons parsley leaves
  • 50g feta cheese

COUSCOUS DRESSING

  • Juice of ½ lemon
  • 2 tablespoons olive oil
  • 1 teaspoon runny honey
  • 1 teaspoon mustard (e.g. wholegrain, Dijon)
  • 3 teaspoons vinegar (e.g. red wine, white wine)

LEMON HUMMUS

  • 1-2 tablespoons lemon juice
  • 2 tablespoons mayonnaise
  • 50g hummus

Steps

  1. a full kettle to the boil. Preheat BBQ hot plate or grill to medium-high heat (if using).
  2. Place all lamb kofta ingredients into a large bowl and mix well using your hands. Divide lamb mince into 10 equal portions and use damp hands to shape into 8cm-long sausages. Thread one sausage onto each skewer and set aside.
  3. In a large, heat-proof bowl place couscous, oil and salt. Cover with boiling water, stir, cover and leave to swell for 5 minutes, then fluff up grains with a fork. In a small bowl, mix all couscous dressing ingredients together and set aside.
  4. Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook lamb kofta for about 6 minutes, until browned on all sides and cooked through. Use tongs to help turn kofta. Set aside, covered with foil, to rest a few minutes.
  5. While kofta cook, prepare the salad. Dice cucumber 1cm; peel and grate carrot; finely slice spring onion (if using); cut cherry tomatoes in half; finely chop parsley; crumble feta cheese. Add all to bowl with couscous, toss dressing through until combined and season with salt and pepper.
  6. Mix all lemon hummus ingredients together in a small bowl.
  7. Spoon Greek couscous salad onto plates and top with a few lamb kofta. Serve a dollop of lemon hummus on top.
